D-Mannitolisanacycliccarbohydrate.Crystalparametersandspacegroupsofthevariouspolymorphiccrystallineformsofmannitolhavebeenreported.Ithasbeenproposedasanartificialsweetner.SynthesisofD-mannitolfromD-glucoseorD-glucose/D-fructosesyrupsinthepresenceofglucoseisomeraseandcopper-on-silicahasbeenproposed.
